Strawberry Cheesecake Mousse

Ingredients:

  • For the Strawberry Puree:
    • 1 cup fresh strawberries, hulled and chopped
    • 1/4 cup granulated sugar
    • 1 tablespoon lemon juice
  • For the Mousse:
    • 1 cup heavy cream
    • 1 cup cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1 cup strawberry puree (from above)

Instructions:

  1. Prepare the Strawberry Puree:
    • In a medium saucepan, combine the strawberries, granulated sugar, and lemon juice.
    • Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens (about 10 minutes).
    • Remove from heat and let cool. Once cooled, blend until smooth. Set aside.
  2. Make the Mousse:
    • In a large bowl, whip the heavy cream until stiff peaks form.
    • In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
    • Gently fold the strawberry puree into the cream cheese mixture until well combined.
    • Fold in the whipped cream until the mixture is smooth and light.
  3. Chill and Serve:
    • Spoon the mousse into serving glasses or bowls.
    • Refrigerate for at least 2 hours to set.
    • Garnish with fresh strawberries or a dollop of whipped cream before serving, if desired.
