Ingredients:
- For the Strawberry Puree:
- 1 cup fresh strawberries, hulled and chopped
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- For the Mousse:
- 1 cup heavy cream
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup strawberry puree (from above)
Instructions:
- Prepare the Strawberry Puree:
- In a medium saucepan, combine the strawberries, granulated sugar, and lemon juice.
- Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens (about 10 minutes).
- Remove from heat and let cool. Once cooled, blend until smooth. Set aside.
- Make the Mousse:
- In a large bowl, whip the heavy cream until stiff peaks form.
- In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Gently fold the strawberry puree into the cream cheese mixture until well combined.
- Fold in the whipped cream until the mixture is smooth and light.
- Chill and Serve:
- Spoon the mousse into serving glasses or bowls.
- Refrigerate for at least 2 hours to set.
- Garnish with fresh strawberries or a dollop of whipped cream before serving, if desired.
